Delicious Lobster Thermidor stuffed inside creamy avocados, perfect for a gourmet meal.

- 2 avocados
- 1 pound lobster meat, cooked and chopped
- 1/2 cup heavy cream
- 1/2 cup shredded cheese (Gruyere or cheddar)
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 cup white wine
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh parsley, chopped
- 1 egg yolk
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Cut the avocados in half and remove the pit. Scoop out a little of the flesh to create space for the filling.
- In a saucepan, melt butter over medium heat, stir in flour, and cook for about a minute.
- Gradually add heavy cream and white wine, stirring until thickened.
- Add chopped lobster meat, Dijon mustard, and season with salt and pepper. Stir in egg yolk and shredded cheese.
- Stuff the avocado halves with the lobster mixture.
- Bake in the oven for about 15-20 minutes until bubbly and golden on top.
- Garnish with fresh parsley before serving.
Notes
- Can substitute lobster with crab meat or shrimp for variations.
- Best served immediately while warm.
