Description
A refreshing and healthy Low-Carb Apple-Cider Shaved Brussels Sprout Salad, perfect for a light meal or side dish.
Ingredients
Scale
- 2 cups Brussels sprouts, trimmed and thinly sliced
- 1 medium apple, cored and thinly sliced (preferably a tart variety like Granny Smith)
- 1/4 cup walnuts, chopped
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup apple cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon honey (or sugar substitute for a lower-carb option)
- Salt and pepper to taste
Instructions
- In a large bowl, combine the thinly sliced Brussels sprouts and apple slices. Toss gently to mix.
- In a small bowl, whisk together the apple cider vinegar, olive oil, Dijon mustard, honey, salt, and pepper until well combined.
- Pour the dressing over the Brussels sprouts and apple mixture. Toss until everything is evenly coated.
- Add the chopped walnuts and feta cheese (if using) to the salad and gently mix.
- For best flavor, let the salad sit for at least 15 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For added crunch, consider adding thinly sliced radishes or shredded carrots.
- Substitute the walnuts with pecans or sunflower seeds for a different flavor profile.
