Description
Delicious and easy-to-make Low Carb Broccoli and Cheese Fritters that are perfect for a healthy snack or side dish.
Ingredients
Scale
- 2 cups fresh broccoli florets, chopped finely
- 1 cup shredded cheddar cheese
- 1/2 cup almond flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 tablespoons olive oil (for frying)
Instructions
- Begin by steaming the chopped broccoli florets until tender, about 5-7 minutes. Drain and let cool slightly.
- In a large mixing bowl, combine the steamed broccoli, shredded cheddar cheese, almond flour, eggs, grated Parmesan cheese, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
- Heat olive oil in a large skillet over medium heat.
- Scoop about 2 tablespoons of the broccoli mixture and form it into a patty. Place it in the skillet. Repeat with the remaining mixture, ensuring not to overcrowd the pan.
- Cook the fritters for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.
- Serve warm, garnished with additional cheese or a dollop of sour cream if desired.
Notes
- For added flavor, consider mixing in some chopped green onions or cooked bacon bits into the batter.
- You can also bake the fritters at 400°F for 20-25 minutes, flipping halfway through, for a healthier option.
