Description

Delicious and easy-to-make Low Carb Broccoli and Cheese Fritters that are perfect for a healthy snack or side dish.

Ingredients

Scale
  • 2 cups fresh broccoli florets, chopped finely
  • 1 cup shredded cheddar cheese
  • 1/2 cup almond flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Begin by steaming the chopped broccoli florets until tender, about 5-7 minutes. Drain and let cool slightly.
  2. In a large mixing bowl, combine the steamed broccoli, shredded cheddar cheese, almond flour, eggs, grated Parmesan cheese, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
  3. Heat olive oil in a large skillet over medium heat.
  4. Scoop about 2 tablespoons of the broccoli mixture and form it into a patty. Place it in the skillet. Repeat with the remaining mixture, ensuring not to overcrowd the pan.
  5. Cook the fritters for about 4-5 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.
  7. Serve warm, garnished with additional cheese or a dollop of sour cream if desired.

Notes

  • For added flavor, consider mixing in some chopped green onions or cooked bacon bits into the batter.
  • You can also bake the fritters at 400°F for 20-25 minutes, flipping halfway through, for a healthier option.
