Description

Low-Carb Candy Corn Fat Bombs are a sweet and healthy treat perfect for satisfying your cravings without the carbs.


Ingredients

Scale
  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened peanut butter
  • 1/4 cup sugar-free vanilla protein powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon yellow food coloring
  • 1/4 teaspoon orange food coloring
  • 1/4 cup sugar-free white chocolate chips (optional)


Instructions

  1. In a large mixing bowl, combine the almond flour, shredded coconut, melted coconut oil, peanut butter, protein powder, salt, and vanilla extract. Mix until well combined and a dough forms.
  2. Divide the dough into three equal portions. Leave one portion as is for the white layer.
  3. To the second portion, add yellow food coloring and mix until the color is evenly distributed.
  4. To the third portion, add orange food coloring and mix until the color is evenly distributed.
  5. Line a small baking dish (8×4 inches) with parchment paper. Press the white layer into the bottom of the dish, smoothing it out evenly.
  6. Next, press the yellow layer on top of the white layer, smoothing it out evenly.
  7. Finally, press the orange layer on top of the yellow layer, smoothing it out evenly.
  8. If using, sprinkle the sugar-free white chocolate chips on top of the orange layer and gently press them in.
  9. Place the dish in the freezer for at least 1 hour to firm up.
  10. Once firm, remove from the freezer and lift the parchment paper to take the fat bombs out of the dish. Cut into small squares or triangles to resemble candy corn.

Notes

  • For a nut-free version, substitute almond flour with sunflower seed flour.
  • Add a pinch of cinnamon or nutmeg to the dough for a seasonal flavor twist.
