Delicious and spooky Low-Carb Chocolate Eyeball Pops perfect for Halloween or any fun occasion!


Ingredients

Scale
  • 1 cup sugar-free dark chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sugar-free chocolate syrup
  • 1/4 cup edible candy eyes
  • Popsicle sticks or lollipop sticks


Instructions

  1. In a microwave-safe bowl, combine the sugar-free dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  2. In another bowl, whisk together the heavy cream, vanilla extract, salt, and cocoa powder until well combined.
  3. Slowly pour the melted chocolate mixture into the cream mixture, stirring continuously until fully incorporated.
  4. Add the sugar-free chocolate syrup and mix until smooth.
  5. Pour the mixture into popsicle molds, filling them about 3/4 full.
  6. Insert popsicle sticks into the molds and freeze for at least 4 hours or until completely solid.
  7. Once frozen, carefully remove the pops from the molds.
  8. Decorate the top of each pop with edible candy eyes, pressing them gently into the chocolate.
  9. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

  • For a minty twist, add 1/2 teaspoon of peppermint extract to the chocolate mixture before pouring it into the molds.
  • Substitute the sugar-free chocolate syrup with almond butter for a nutty flavor and added creaminess.
