Ingredients

- 1 cup almonds
- 1 cup pecans
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/4 cup coconut flakes
- 1/4 cup chia seeds
- 1/4 cup erythritol or another low-carb sweetener
- 1/2 teaspoon cinnamon
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 300°F (150°C).
- In a large bowl, combine all dry ingredients: almonds, pecans, sunflower seeds, pumpkin seeds, coconut flakes, chia seeds, erythritol, and cinnamon.
- In a separate bowl, mix melted coconut oil and vanilla extract.
- Pour the wet mixture over the dry ingredients and stir until evenly coated.
- Spread the mixture on a baking sheet lined with parchment paper.
- Bake for about 30-40 minutes, stirring halfway through, until golden brown.
- Allow to cool completely before storing in an airtight container.
