- 2 cups almond flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 2 large eggs
- 1/4 cup water
- 1 tablespoon olive oil
- 1 cup cooked spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup cooked ground beef or sausage
- 1/4 teaspoon nutmeg
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- In a large bowl, combine almond flour, salt, and baking powder. Mix well.
- In a separate bowl, whisk together the eggs, water, and olive oil.
- Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. If the dough is too sticky, add a little more almond flour.
- On a floured surface (using almond flour), roll out the dough to about 1/8 inch thick. Cut into rectangles (about 3×4 inches).
- In another bowl, mix the spinach, ricotta cheese, ground beef or sausage, nutmeg, black pepper, and Parmesan cheese until well combined.
- Place a spoonful of the filling in the center of each rectangle. Fold the dough over to create a pocket and press the edges to seal.
- Bring a large pot of salted water to a boil. Carefully drop the Maultaschen into the boiling water and cook for about 5-7 minutes, or until they float to the top.
- Remove the Maultaschen with a slotted spoon and drain. Serve with melted butter or your favorite low-carb sauce.

- For a vegetarian option, substitute the ground beef or sausage with sautéed mushrooms or additional vegetables.
- Try adding herbs like parsley or basil to the filling for extra flavor.
