Description
A delicious and nutritious low-carb version of traditional Maultaschen, filled with mushrooms and cheese.

- 2 cups almond flour
- 1 large egg
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 cup ricotta cheese
- 1 cup finely chopped mushrooms (such as cremini or button)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In a mixing bowl, combine almond flour, egg, salt, and olive oil. Mix until a dough forms. If the dough is too crumbly, add a teaspoon of water until it holds together. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- While the dough chills, heat a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and chopped mushrooms, cooking until the mushrooms are soft and any liquid has evaporated, about 5-7 minutes. Stir in thyme, black pepper, and remove from heat. Let cool slightly.
- In a bowl, combine the mushroom mixture with ricotta cheese and Parmesan cheese. Mix well to combine.
- On a lightly floured surface (using more almond flour), roll out the chilled dough to about 1/8 inch thick. Cut into squares or rectangles, approximately 3×3 inches.
- Place a tablespoon of the mushroom filling in the center of each dough square. Fold the dough over to form a triangle or rectangle, pressing the edges to seal. You can use a fork to crimp the edges for a decorative touch.
- Bring a large pot of salted water to a boil. Carefully drop the maultaschen into the boiling water in batches. Cook for about 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and drain.
- Serve warm, garnished with fresh parsley. Enjoy as is or with a drizzle of olive oil or a light broth.
Notes
- For added flavor, sauté the mushroom filling with a splash of white wine before mixing with the cheeses.
- You can substitute the ricotta with cottage cheese for a different texture and flavor.
