Low Carb Pizza-Muffins are a delicious and guilt-free snack option that combines the flavors of pizza in a convenient muffin form.


Ingredients

  • 1 ½ cups almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • 3 large eggs
  • 1 cup shredded mozzarella cheese
  • ½ cup diced pepperoni
  • ½ cup diced bell peppers (any color)
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • ¼ cup sugar-free marinara sauce (for dipping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.
  2. In a large mixing bowl, combine almond flour, baking powder, garlic powder, Italian seasoning, and salt. Mix well.
  3. In another bowl, whisk together the eggs and olive oil until well combined.
  4. Pour the egg mixture into the dry ingredients and stir until just combined.
  5. Fold in the shredded mozzarella cheese, diced pepperoni, diced bell peppers, and grated Parmesan cheese until evenly distributed.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. Serve warm or at room temperature with sugar-free marinara sauce for dipping.
