- 3 large eggs
- 1 cup shredded mozzarella cheese

- ½ cup diced bell peppers (any color)
- ¼ cup grated Parmesan cheese
- 1 tablespoon olive oil
- ¼ cup sugar-free marinara sauce (for dipping)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with cooking spray.
- In a large mixing bowl, combine almond flour, baking powder, garlic powder, Italian seasoning, and salt. Mix well.
- In another bowl, whisk together the eggs and olive oil until well combined.
- Pour the egg mixture into the dry ingredients and stir until just combined.
- Fold in the shredded mozzarella cheese, diced pepperoni, diced bell peppers, and grated Parmesan cheese until evenly distributed.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- Serve warm or at room temperature with sugar-free marinara sauce for dipping.

- For a vegetarian option, substitute the pepperoni with diced mushrooms or olives.
