Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 can (13.5 oz) coconut milk
  • 1 tablespoon lime juice
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup chopped cilantro


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken thighs with curry powder, paprika, garlic powder, salt, and pepper.
  3. Add chicken to the skillet and cook until browned.
  4. Pour in coconut milk and add lime juice and red pepper flakes.
