Description

Low-Carb Spicy Tuna Cucumber Cups are a zesty and refreshing appetizer that combines the flavors of spicy tuna with crisp cucumber.

Ingredients

Scale
  • 1 can (5 oz) tuna, drained
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha sauce (adjust to taste)
  • 1 teaspoon soy sauce
  • 1 teaspoon lime juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 medium cucumber
  • 1 green onion, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the drained tuna, mayonnaise, sriracha, soy sauce, lime juice, garlic powder, and onion powder. Mix well until all ingredients are fully incorporated. Season with salt and pepper to taste.
  2. Slice the cucumber in half lengthwise and scoop out the seeds using a spoon to create a hollowed-out space for the filling.
  3. Cut the cucumber halves into 3-4 inch pieces to create cups.
  4. Spoon the spicy tuna mixture into each cucumber cup generously.
  5. Garnish with chopped green onion on top.
  6. Serve immediately or chill in the refrigerator for 15-30 minutes for a refreshing bite.

Notes

  • For added crunch, mix in some diced celery or bell pepper into the tuna mixture.
  • Substitute the tuna with canned chicken or salmon for a different flavor profile.
