Ingredients

  • 1 cup water
  • 1 cup granulated erythritol or your favorite low-carb sweetener
  • 1/4 cup cornstarch
  • 1/4 cup unflavored gelatin powder
  • 1/2 teaspoon rosewater
  • 1/2 cup shelled pistachios, coarsely chopped
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice


Instructions

  1. Pour the water into a medium saucepan and add the erythritol and salt. Heat over medium flame, stirring until the sweetener dissolves and the liquid reaches a gentle boil.
  2. In a separate bowl, combine the cornstarch and gelatin powder with 1/2 cup of cold water, whisking until smooth.
  3. Slowly incorporate the cornstarch and gelatin mixture into the boiling sweetener, whisking continuously to avoid lumps.
  4. Lower the heat and stir the mixture for about 10-15 minutes until it thickens and turns translucent.
  5. Remove from heat and mix in the rosewater and lemon juice. Gently fold in the chopped pistachios.
  6. Transfer the mixture into a greased 8×8-inch square baking dish, smoothing it out evenly.
  7. Allow to cool at room temperature for approximately 2 hours or until fully set.
  8. Once set, slice into small squares and sprinkle with extra erythritol if desired. Store in an airtight container in the refrigerator for up to a week.

  • For a firmer texture, increase the gelatin to 1/3 cup.
  • Swap pistachios for walnuts or almonds for a different taste.
