Ingredients

- 1 cup water
- 1 cup granulated erythritol or your favorite low-carb sweetener
- 1/4 cup cornstarch
- 1/4 cup unflavored gelatin powder
- 1/2 teaspoon rosewater
- 1/2 cup shelled pistachios, coarsely chopped
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
Instructions
- Pour the water into a medium saucepan and add the erythritol and salt. Heat over medium flame, stirring until the sweetener dissolves and the liquid reaches a gentle boil.
- In a separate bowl, combine the cornstarch and gelatin powder with 1/2 cup of cold water, whisking until smooth.
- Slowly incorporate the cornstarch and gelatin mixture into the boiling sweetener, whisking continuously to avoid lumps.
- Lower the heat and stir the mixture for about 10-15 minutes until it thickens and turns translucent.
- Remove from heat and mix in the rosewater and lemon juice. Gently fold in the chopped pistachios.
- Transfer the mixture into a greased 8×8-inch square baking dish, smoothing it out evenly.
- Allow to cool at room temperature for approximately 2 hours or until fully set.
- Once set, slice into small squares and sprinkle with extra erythritol if desired. Store in an airtight container in the refrigerator for up to a week.
Notes
- For a firmer texture, increase the gelatin to 1/3 cup.
- Swap pistachios for walnuts or almonds for a different taste.
- Add a few drops of food coloring for a fun twist.
