Description

Delicious low carb cupcakes perfect for Valentine’s Day.


Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup cocoa powder
  • 1/2 cup erythritol
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 3 large eggs
  • 1/4 cup unsweetened apple sauce
  • 1 tsp vanilla extract
  • 1/4 cup butter, melted
  • 1/4 cup unsweetened almond milk


Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, mix the almond flour, cocoa powder, erythritol, baking powder, and baking soda.
  3. In another bowl, whisk the eggs, apple sauce, vanilla extract, melted butter, and almond milk.
  4. Combine the wet and dry ingredients and mix until well blended.
  5. Pour the batter into the cupcake liners, filling them about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Let cool before serving.

Notes

  • These cupcakes are perfect for a low carb diet but still satisfy a sweet tooth.
  • You can top them with low carb frosting if desired.
