Delicious low carb cupcakes perfect for Valentine’s Day.
Ingredients

- 1 cup almond flour
- 1/4 cup cocoa powder
- 1/2 cup erythritol
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 3 large eggs
- 1/4 cup unsweetened apple sauce
- 1 tsp vanilla extract
- 1/4 cup butter, melted
- 1/4 cup unsweetened almond milk
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
- In a bowl, mix the almond flour, cocoa powder, erythritol, baking powder, and baking soda.
- In another bowl, whisk the eggs, apple sauce, vanilla extract, melted butter, and almond milk.
- Combine the wet and dry ingredients and mix until well blended.
- Pour the batter into the cupcake liners, filling them about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Let cool before serving.
Notes
- These cupcakes are perfect for a low carb diet but still satisfy a sweet tooth.
- You can top them with low carb frosting if desired.
