A healthy and delicious low carb alternative to traditional ravioli, made with zucchini and a savory beef filling.
Ingredients

- 2 medium zucchinis, sliced thinly lengthwise
- 1 pound ground beef
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup marinara sauce (sugar-free)
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven to 375°F.
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and add minced garlic, Italian seasoning, salt, and pepper. Stir to combine and cook for an additional 2 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked beef, ricotta cheese, mozzarella cheese, Parmesan cheese, and egg. Mix until well combined.
- Lay out the zucchini slices on a clean surface. Place a tablespoon of the beef and cheese mixture at one end of each zucchini slice. Roll the zucchini around the filling to form a ravioli shape.
- Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the zucchini ravioli seam-side down in the dish. Top with remaining marinara sauce and sprinkle with additional mozzarella cheese if desired.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving. Garnish with fresh basil if desired.
Notes
- For a spicier version, add red pepper flakes to the beef mixture.
- Substitute ground turkey or chicken for a leaner option.
