Description
Maltese Bragioli is a traditional Maltese dish consisting of beef olives stuffed with a flavorful filling and simmered in a rich sauce.

- 1 kg beef flank steak
- 200 g breadcrumbs
- 100 g onion, finely chopped
- 2 garlic cloves, minced
- 100 g parsley, chopped
- 1 tsp ground black pepper
- 1 tsp salt
- 2 eggs
- 500 ml beef stock
- 200 ml red wine
- 2 tbsp olive oil
- 2 bay leaves
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, mix breadcrumbs, onions, garlic, parsley, pepper, salt, and eggs to create the filling.
- Slice the beef flank steak into thin slices and pound them to flatten.
- Place a spoonful of the filling on each beef slice and roll them up tightly. Secure them with toothpicks or kitchen string.
- In a large pan, heat olive oil over medium heat and sear the bragioli until browned on all sides.
- Add the red wine and beef stock, then bring to a simmer.
- Add bay leaves, cover, and transfer to the oven.
- Bake for 1.5 to 2 hours, until the beef is tender.
- Remove from the oven, discard the bay leaves, and let it rest before serving.
Notes
- For extra flavor, let the bragioli marinate in the filling for a few hours or overnight.
- This dish pairs well with mashed potatoes or crusty bread.
