Description

Maltese Bragioli is a traditional Maltese dish consisting of beef olives stuffed with a flavorful filling and simmered in a rich sauce.


Ingredients

  • 1 kg beef flank steak
  • 200 g breadcrumbs
  • 100 g onion, finely chopped
  • 2 garlic cloves, minced
  • 100 g parsley, chopped
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 2 eggs
  • 500 ml beef stock
  • 200 ml red wine
  • 2 tbsp olive oil
  • 2 bay leaves


Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix breadcrumbs, onions, garlic, parsley, pepper, salt, and eggs to create the filling.
  3. Slice the beef flank steak into thin slices and pound them to flatten.
  4. Place a spoonful of the filling on each beef slice and roll them up tightly. Secure them with toothpicks or kitchen string.
  5. In a large pan, heat olive oil over medium heat and sear the bragioli until browned on all sides.
  6. Add the red wine and beef stock, then bring to a simmer.
  7. Add bay leaves, cover, and transfer to the oven.
  8. Bake for 1.5 to 2 hours, until the beef is tender.
  9. Remove from the oven, discard the bay leaves, and let it rest before serving.

Notes

  • For extra flavor, let the bragioli marinate in the filling for a few hours or overnight.
  • This dish pairs well with mashed potatoes or crusty bread.
