Description

Delicious Mediterranean Feta & Olive Keto Flatbreads that are perfect for a low-carb diet.


Ingredients

  • 1 ½ cups almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon dried oregano
  • 1 large egg
  • 2 tablespoons olive oil
  • ¼ cup feta cheese, crumbled
  • ¼ cup black olives, pitted and chopped
  • ¼ cup green olives, pitted and chopped
  • 1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, baking powder, salt, and dried oregano. Mix well.
  3. In a separate bowl, whisk together the egg and olive oil until well blended.
  4. Pour the egg mixture into the dry ingredients and stir until a dough forms.
  5. Fold in the crumbled feta cheese, black olives, green olives, and parsley (if using) until evenly distributed.
  6. Divide the dough into 4 equal portions and shape each portion into a flatbread about ¼ inch thick. Place them on the prepared baking sheet.
  7. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  8. Allow the flatbreads to cool slightly before serving.

Notes

  • For a spicier version, add 1 teaspoon of crushed red pepper flakes to the dough.
  • Try substituting the feta cheese with goat cheese or adding sun-dried tomatoes for a different flavor profile.
