- 1 ½ cups almond flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon dried oregano
- 1 large egg
- 2 tablespoons olive oil
- ¼ cup feta cheese, crumbled
- ¼ cup black olives, pitted and chopped
- ¼ cup green olives, pitted and chopped
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, baking powder, salt, and dried oregano. Mix well.
- In a separate bowl, whisk together the egg and olive oil until well blended.
- Pour the egg mixture into the dry ingredients and stir until a dough forms.
- Fold in the crumbled feta cheese, black olives, green olives, and parsley (if using) until evenly distributed.
- Divide the dough into 4 equal portions and shape each portion into a flatbread about ¼ inch thick. Place them on the prepared baking sheet.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
- Allow the flatbreads to cool slightly before serving.
Notes
- For a spicier version, add 1 teaspoon of crushed red pepper flakes to the dough.
- Try substituting the feta cheese with goat cheese or adding sun-dried tomatoes for a different flavor profile.
