These Mediterranean Turkey Stuffed Peppers are a healthy and flavorful dish, filled with lean ground turkey, quinoa, and fresh vegetables.

- 4 large bell peppers
- 1 pound ground turkey
- 1 cup cooked quinoa
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup feta cheese, crumbled
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat. Add onion and garlic and sauté until softened.
- Add ground turkey to the skillet, cooking until browned.
- Stir in cooked quinoa, diced tomatoes, oregano, cumin, salt, and pepper. Mix well.
- Stuff each bell pepper with the turkey mixture.
- Place stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes. Remove foil, sprinkle with feta cheese, and bake for an additional 10 minutes.
- Serve warm.
Notes
- Feel free to add your favorite vegetables to the stuffing mixture.
- These can be made ahead of time and frozen before baking.
