Description

These Mediterranean Turkey Stuffed Peppers are a healthy and flavorful dish, filled with lean ground turkey, quinoa, and fresh vegetables.


Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup feta cheese, crumbled


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat. Add onion and garlic and sauté until softened.
  4. Add ground turkey to the skillet, cooking until browned.
  5. Stir in cooked quinoa, diced tomatoes, oregano, cumin, salt, and pepper. Mix well.
  6. Stuff each bell pepper with the turkey mixture.
  7. Place stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes. Remove foil, sprinkle with feta cheese, and bake for an additional 10 minutes.
  9. Serve warm.
