- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup maple syrup
- 1/4 cup almond butter
- 1 teaspoon vanilla extract

- 1/2 cup dark chocolate chips (for coating)
Instructions
- In a large mixing bowl, combine the grated zucchini, almond flour, cocoa powder, maple syrup, almond butter, vanilla extract, and sea salt. Mix until well combined and a dough forms.
- Refrigerate the mixture for about 30 minutes to firm up, making it easier to shape into truffles.
- Once chilled, use your hands to roll the mixture into small balls, about 1 inch in diameter. Place the truffles on a parchment-lined baking sheet.
- In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until smooth.
- Dip each truffle into the melted chocolate, allowing any excess to drip off, then return to the baking sheet.
- Place the truffles in the refrigerator for about 15 minutes to set the chocolate coating.
