Instructions

  1. In a large mixing bowl, combine the grated zucchini, almond flour, cocoa powder, maple syrup, almond butter, vanilla extract, and sea salt. Mix until well combined and a dough forms.
  2. Refrigerate the mixture for about 30 minutes to firm up, making it easier to shape into truffles.
  3. Once chilled, use your hands to roll the mixture into small balls, about 1 inch in diameter. Place the truffles on a parchment-lined baking sheet.
  4. In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between until smooth.
