Description

Delicious mini keto chocolate lava cake bites that are rich and satisfyingly sweet without the carbs.


Ingredients

  • 2 large eggs
  • 1/2 cup sugar-free chocolate hazelnut spread
  • 1/4 cup granulated sugar substitute
  • 2 tablespoons almond flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/8 teaspoon sea salt

Instructions

  1. Preheat your oven to 375°F.
  2. In a mixing bowl, combine the eggs, sugar-free chocolate hazelnut spread, sugar substitute, almond flour, cocoa powder, and sea salt. Mix until well combined.
  3. Spray a cupcake pan with non-stick cooking spray, ensuring the walls and bottoms are well coated.
  4. Divide the batter evenly among the cupcake pan openings.
  5. Bake for 8 minutes on the center rack of the oven. Avoid opening the oven door during baking. The lava cake bites will look undercooked but will finish baking as they cool.
  6. Remove the pan from the oven and let cool for 5 minutes before carefully removing each cake from the pan.

Notes

  • For an extra touch, serve with a dollop of whipped cream made from heavy cream and a sugar substitute.
  • You can substitute the almond flour with coconut flour, but reduce the amount to 1 tablespoon, as coconut flour absorbs more moisture.
