Ingredients

- 1 cup smooth peanut butter
- 1/2 cup cocoa powder (unsweetened)
- 1/4 cup honey or agave syrup
- 1/4 cup melted coconut oil
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon sea salt
- 1/2 cup mini chocolate chips
Instructions
- In a medium-sized bowl, whisk together the peanut butter, cocoa powder, honey (or agave syrup), melted coconut oil, vanilla extract, and sea salt until smooth.
- Gently fold in the mini chocolate chips until evenly mixed.
- Prepare a mini muffin tin by lining it with paper liners or greasing it lightly.
- Fill each muffin cup about three-quarters full with the mixture.
- Transfer the muffin tin to the refrigerator and chill for at least one hour.
- Once set, carefully remove the bites from the tin and store in an airtight container in the fridge.
Notes
- For added crunch, mix in 1/4 cup of chopped nuts or seeds before filling the muffin tin.
- Try using almond butter or sunflower seed butter as an alternative to peanut butter for different flavors.
