Delicious mocha walnut coffee bites that are keto-friendly and perfect for a quick snack.


Ingredients

  • 1 cup walnuts
  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sugar-free sweetener
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee
  • 1/2 teaspoon baking powder


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the walnuts, almond flour, cocoa powder, sweetener, and baking powder.
  3. In another bowl, mix the melted coconut oil, eggs, vanilla extract, and instant coffee until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until fully incorporated.
  5. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes or until the edges are firm.
  7. Let cool before serving.
