Ingredients

- 1 cup walnuts
- 1/2 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup sugar-free sweetener
- 1/4 cup coconut oil, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon instant coffee
- 1/2 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the walnuts, almond flour, cocoa powder, sweetener, and baking powder.
- In another bowl, mix the melted coconut oil, eggs, vanilla extract, and instant coffee until well combined.
- Pour the wet ingredients into the dry ingredients and mix until fully incorporated.
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until the edges are firm.
- Let cool before serving.
