A rich and flavorful Moroccan dish featuring tender lamb and a healthy cauliflower couscous.

- 2 pounds lamb shoulder, cut into chunks
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1 tablespoon honey
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 1 cup dried apricots, chopped
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 head cauliflower, grated
- 1 tablespoon fresh cilantro, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add lamb and brown on all sides.
- Add onions and garlic, cooking until soft.
- Stir in spices, honey, tomatoes, and broth. Bring to a simmer.
- Add apricots, salt, and pepper. Cover and cook for 1.5 to 2 hours until lamb is tender.
- Meanwhile, prepare cauliflower couscous by steaming grated cauliflower until tender.
- Stir in cilantro into the cauliflower before serving.
- Serve lamb tagine over cauliflower couscous.
Notes
- For deeper flavor, marinate the lamb overnight.
- Adjust spices to preference for heat or sweetness.
