Description

A rich and flavorful Moroccan dish featuring tender lamb and a healthy cauliflower couscous.


Ingredients

  • 2 pounds lamb shoulder, cut into chunks
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 tablespoon honey
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup dried apricots, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 head cauliflower, grated
  • 1 tablespoon fresh cilantro, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat. Add lamb and brown on all sides.
  2. Add onions and garlic, cooking until soft.
  3. Stir in spices, honey, tomatoes, and broth. Bring to a simmer.
  4. Add apricots, salt, and pepper. Cover and cook for 1.5 to 2 hours until lamb is tender.
  5. Meanwhile, prepare cauliflower couscous by steaming grated cauliflower until tender.
  6. Stir in cilantro into the cauliflower before serving.
  7. Serve lamb tagine over cauliflower couscous.

  • For deeper flavor, marinate the lamb overnight.
