- 1 whole leg of lamb
- 4 cloves garlic, minced
- 2 tablespoons ground cumin
- 2 tablespoons ground coriander
- 1 tablespoon ground cinnamon
- 1 tablespoon paprika
- 2 teaspoons ground ginger
- 2 teaspoons cayenne pepper
- 1 cup olive oil
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 large onion, chopped
- 1 lemon, juiced
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix garlic, cumin, coriander, cinnamon, paprika, ginger, cayenne, olive oil, salt, and pepper to make a marinade.
- Rub the marinade all over the leg of lamb, ensuring it is well coated.
- Place the lamb in a large roasting pan and add chopped onions and lemon juice around it.
- Roast in the oven for approximately 3-4 hours, or until the meat is tender and falling off the bone.
- Let the lamb rest for 15 to 20 minutes before carving. Serve warm.
Notes
- For a more intense flavor, marinate the lamb overnight.
- Serve with couscous or flatbread.
