Description

A flavorful and fragrant Moroccan-style roasted lamb dish.


Ingredients

  • 1 whole leg of lamb
  • 4 cloves garlic, minced
  • 2 tablespoons ground cumin
  • 2 tablespoons ground coriander
  • 1 tablespoon ground cinnamon
  • 1 tablespoon paprika
  • 2 teaspoons ground ginger
  • 2 teaspoons cayenne pepper
  • 1 cup olive oil
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 large onion, chopped
  • 1 lemon, juiced


Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix garlic, cumin, coriander, cinnamon, paprika, ginger, cayenne, olive oil, salt, and pepper to make a marinade.
  3. Rub the marinade all over the leg of lamb, ensuring it is well coated.
  4. Place the lamb in a large roasting pan and add chopped onions and lemon juice around it.
  5. Roast in the oven for approximately 3-4 hours, or until the meat is tender and falling off the bone.
  6. Let the lamb rest for 15 to 20 minutes before carving. Serve warm.

  • For a more intense flavor, marinate the lamb overnight.
  • Serve with couscous or flatbread.
