Description

A delightful Italian dish made with fresh nettles and ricotta cheese, creating tender gnudi that pair beautifully with a variety of sauces.


Ingredients

  • 200 grams fresh nettles, washed and roughly chopped
  • 250 grams ricotta cheese
  • 100 grams all-purpose flour, plus extra for dusting
  • 1 large egg
  • 50 grams grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Bring a pot of salted water to a boil and blanch the nettles for 2-3 minutes. Drain and cool, then squeeze out excess water and chop.
  2. In a bowl, combine the chopped nettles, ricotta, flour, egg, Parmesan, salt, and pepper. Mix until a soft dough forms.
  3. Dust your hands and a clean surface with flour. Take small amounts of dough and form them into oval shapes.
  4. Bring a large pot of salted water back to a boil. Cook the gnudi in batches for about 3-4 minutes or until they float to the surface.
  5. Serve hot with your choice of sauce, garnished with extra Parmesan.

Notes

  • For a richer flavor, sauté the gnudi in butter before serving.
  • Make sure to properly blanch the nettles to remove any bitterness.
