Instructions

- Press the mixture into the bottom of a springform pan to form a crust.
- In a separate bowl, beat the cream cheese, erythritol, and vanilla until smooth.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Pour the cheesecake mixture over the crust and spread evenly.
- Refrigerate for at least 4 hours or until set.
