- 2 cups unsweetened shredded coconut
- 1 cup shelled raw pistachios
- 1/2 cup creamy almond butter
- 1/4 cup pure maple syrup or honey
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon sea salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Place the shredded coconut, pistachios, almond butter, maple syrup or honey, vanilla extract, and sea salt into a food processor.
- Blend the ingredients until they form a cohesive and sticky mixture.
- Prepare an 8×8-inch baking dish by lining it with parchment paper, allowing some paper to hang over the edges.
- Spoon the blended mixture into the dish and press it down firmly to create an even layer.
- If using chocolate, melt the dark chocolate chips in a microwave-safe bowl, heating in 30-second increments and stirring until smooth.
- Drizzle the melted chocolate over the pressed mixture.
- Place the dish in the refrigerator and let it chill for a minimum of 2 hours, or until hardened.
- Once set, lift the bars out using the parchment paper and slice them into squares or rectangles.
Notes
- For a nut-free alternative, replace almond butter with sunflower seed butter.
- Enhance flavor by adding dried fruits such as cranberries or apricots.
