- 1 cup pumpkin seeds
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsweetened shredded coconut
- 1/4 cup almond butter
- 1/4 cup sugar-free sweetener
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the pumpkin seeds, cocoa powder, shredded coconut, almond butter, sweetener, vanilla extract, and salt until combined.
- Drop spoonfuls of the mixture onto a lined baking sheet.
- Bake for 10-12 minutes or until set.
- Let cool before serving.
