- 1/2 cup dried cranberries
- 1 cup almond flour
- 1/2 cup coconut oil, melted
- 1/4 cup natural sweetener (like erythritol)
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
- In a mixing bowl, combine the pistachios, dried cranberries, almond flour, coconut oil, sweetener, vanilla extract, and salt.
- Mix well until all ingredients are combined.
- Press the mixture firmly into the prepared pan.
- Bake for 20-25 minutes, or until golden brown.
- Let cool completely in the pan before cutting into bars.
