Instructions
- Heat the olive oil in a large skillet over medium-high heat until it shimmers.
- Season the scallops generously with salt and pepper on both sides.
- Carefully add the scallops to the skillet, ensuring they are not crowded.
- Sear the scallops undisturbed for about 2-3 minutes until they develop a beautiful golden crust.
- Flip the scallops and continue cooking for another 2-3 minutes until they turn opaque and are fully cooked.
- Remove the scallops from the skillet and place them on a plate.
- Lower the heat to medium and add the butter to the same skillet.
- Allow the butter to melt, then add the chopped garlic, sautéing for approximately 30 seconds until it becomes aromatic.
- Incorporate the lemon juice and lemon zest, stirring for an additional minute to blend the flavors.
- Gently reintroduce the scallops to the skillet, tossing them in the garlic lemon butter to ensure they are well-coated.
- Serve the scallops hot, garnished with the freshly chopped parsley.
