Description

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, finely chopped
  • 1 tablespoon freshly squeezed lemon juice
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, finely chopped (for garnish)


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat until it shimmers.
  2. Season the scallops generously with salt and pepper on both sides.
  3. Carefully add the scallops to the skillet, ensuring they are not crowded.
  4. Sear the scallops undisturbed for about 2-3 minutes until they develop a beautiful golden crust.
  5. Flip the scallops and continue cooking for another 2-3 minutes until they turn opaque and are fully cooked.
  6. Remove the scallops from the skillet and place them on a plate.
  7. Lower the heat to medium and add the butter to the same skillet.
  8. Allow the butter to melt, then add the chopped garlic, sautéing for approximately 30 seconds until it becomes aromatic.
  9. Incorporate the lemon juice and lemon zest, stirring for an additional minute to blend the flavors.
  10. Gently reintroduce the scallops to the skillet, tossing them in the garlic lemon butter to ensure they are well-coated.
  11. Serve the scallops hot, garnished with the freshly chopped parsley.
