Ingredients

- 4 slices pancetta
- 2 ripe avocados
- 4 large eggs
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
- 1 loaf of crusty bread
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange pancakes slices on a baking sheet and bake until crispy, about 10-15 minutes.
- While the pancetta is cooking, bring a small pot of water to boil.
- Gently add the eggs to the boiling water and cook for 6-7 minutes for soft-boiled.
- Remove eggs and place them in an ice bath to stop the cooking.
- Peel and slice the avocados, mixing with lemon juice, salt, and pepper.
- Toast the crusty bread and cut it into strips.
- Serve the crispy pancetta, avocado mixture, and eggs with the bread for dipping.
