Description

Delicious pancetta avocado soldiers perfect for dipping.


Ingredients

  • 4 slices pancetta
  • 2 ripe avocados
  • 4 large eggs
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste
  • 1 loaf of crusty bread


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange pancakes slices on a baking sheet and bake until crispy, about 10-15 minutes.
  3. While the pancetta is cooking, bring a small pot of water to boil.
  4. Gently add the eggs to the boiling water and cook for 6-7 minutes for soft-boiled.
  5. Remove eggs and place them in an ice bath to stop the cooking.
  6. Peel and slice the avocados, mixing with lemon juice, salt, and pepper.
  7. Toast the crusty bread and cut it into strips.
  8. Serve the crispy pancetta, avocado mixture, and eggs with the bread for dipping.
