Description
Deliciously crunchy Parmesan Zucchini Fries made in an air fryer.
Ingredients

- 2 medium zucchinis, cut into fries
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (preferably Italian-style)
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat the air fryer to 400°F.
- In a shallow bowl, whisk the eggs together.
- In another shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
- Dip each zucchini fry into the egg mixture, allowing any excess to drip off.
- Roll the coated zucchini fry in the breadcrumb mixture, pressing gently to adhere.
- Place the coated zucchini fries in a single layer in the air fryer basket. Spray lightly with cooking spray.
- Cook for 10-12 minutes, shaking the basket halfway through, until the fries are golden brown and crispy.
- Remove from the air fryer and let cool for a few minutes before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the breadcrumb mixture.
- Try using different types of cheese, like mozzarella or cheddar, for a unique flavor twist.
