Description

Ingredients

- 2 partridges
- 1 cup white wine vinegar
- 1/2 cup olive oil
- 2 cloves of garlic, chopped
- 1 onion, sliced
- 1 carrot, sliced
- 1 bell pepper, sliced
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 bay leaf
Instructions
- Clean the partridges and season them with salt and pepper.
- In a large skillet, heat the olive oil over medium heat.
- Add the partridges and brown them on all sides.
- Remove the partridges and set them aside.
- Add the onion, garlic, carrot, and bell pepper to the skillet and sauté until softened.
- Stir in the vinegar, paprika, bay leaf, and any remaining seasoning.
- Return the partridges to the skillet, cover, and simmer for 1 hour.
- Let the dish cool and serve chilled or at room temperature.
Notes
- Serve with crusty bread or rice.
- For best flavor, marinate the partridges overnight before cooking.
