Description

A traditional dish featuring partridge marinated and cooked in a spiced vinegar and oil mixture.


Ingredients

  • 2 partridges
  • 1 cup white wine vinegar
  • 1/2 cup olive oil
  • 2 cloves of garlic, chopped
  • 1 onion, sliced
  • 1 carrot, sliced
  • 1 bell pepper, sliced
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 bay leaf


Instructions

  1. Clean the partridges and season them with salt and pepper.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the partridges and brown them on all sides.
  4. Remove the partridges and set them aside.
  5. Add the onion, garlic, carrot, and bell pepper to the skillet and sauté until softened.
  6. Stir in the vinegar, paprika, bay leaf, and any remaining seasoning.
  7. Return the partridges to the skillet, cover, and simmer for 1 hour.
  8. Let the dish cool and serve chilled or at room temperature.

Notes

  • Serve with crusty bread or rice.
  • For best flavor, marinate the partridges overnight before cooking.
