- 1 cup peanut butter
- 1 can (14 oz) coconut milk
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 2 tablespoons curry powder
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 tablespoon lime juice
- 1/4 cup cilantro, chopped
Instructions
- In a large skillet, heat olive oil over medium heat. Add onion, garlic, and ginger, sauté until fragrant.
- Add chicken pieces and cook until golden brown.
- Stir in curry powder and cook for an additional minute.
- Add peanut butter, coconut milk, chicken broth, and soy sauce. Bring to a simmer.
- Cook for 15-20 minutes, stirring occasionally until chicken is cooked through and sauce is thickened.
- Finish with lime juice and cilantro before serving.
