Description

Ingredients

  • 1 cup peanut butter
  • 1 can (14 oz) coconut milk
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 tablespoons curry powder
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 tablespoon lime juice
  • 1/4 cup cilantro, chopped


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add onion, garlic, and ginger, sauté until fragrant.
  2. Add chicken pieces and cook until golden brown.
  3. Stir in curry powder and cook for an additional minute.
  4. Add peanut butter, coconut milk, chicken broth, and soy sauce. Bring to a simmer.
  5. Cook for 15-20 minutes, stirring occasionally until chicken is cooked through and sauce is thickened.
  6. Finish with lime juice and cilantro before serving.
