A delicious and hearty Peanut & Okra Soup that combines the rich flavors of peanut butter with fresh okra and spices.

- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 bell pepper, chopped
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 cups vegetable broth
- 2 cups fresh okra, sliced (or frozen okra)
- 1 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 2 tablespoons fresh lime juice
- Chopped cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the chopped bell pepper and cook for another 3-4 minutes until softened.
- Pour in the diced tomatoes with their juice and the vegetable broth. Bring the mixture to a simmer.
- Add the sliced okra and continue to simmer for about 10 minutes, or until the okra is tender.
- Stir in the peanut butter, soy sauce, and cayenne pepper. Mix well until the peanut butter is fully incorporated.
- Season with salt and pepper to taste, and add the lime juice just before serving.
- Ladle the soup into bowls and garnish with chopped cilantro.
Notes
- For a spicier kick, add chopped jalapeños along with the bell pepper.
- Substitute the vegetable broth with chicken broth for a non-vegetarian option.
