Description

A delicious and hearty Peanut & Okra Soup that combines the rich flavors of peanut butter with fresh okra and spices.


Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 2 cups fresh okra, sliced (or frozen okra)
  • 1 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 2 tablespoons fresh lime juice
  • Chopped cilantro for garnish


Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the chopped bell pepper and cook for another 3-4 minutes until softened.
  4. Pour in the diced tomatoes with their juice and the vegetable broth. Bring the mixture to a simmer.
  5. Add the sliced okra and continue to simmer for about 10 minutes, or until the okra is tender.
  6. Stir in the peanut butter, soy sauce, and cayenne pepper. Mix well until the peanut butter is fully incorporated.
  7. Season with salt and pepper to taste, and add the lime juice just before serving.
  8. Ladle the soup into bowls and garnish with chopped cilantro.

Notes

  • For a spicier kick, add chopped jalapeños along with the bell pepper.
  • Substitute the vegetable broth with chicken broth for a non-vegetarian option.
