Description

Persian Joojeh Kabab is a flavorful and aromatic grilled chicken dish, marinated with saffron and lime, perfect for outdoor barbecues.


Ingredients

  • 2 pounds chicken, cut into pieces
  • 1/2 cup plain yogurt
  • 1/4 cup olive oil
  • 2 lemons, juiced
  • 1/4 teaspoon saffron threads
  • 4 cloves garlic, minced
  • 1 onion, grated
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon turmeric


Instructions

  1. In a bowl, combine yogurt, olive oil, lemon juice, saffron, garlic, onion, salt, pepper, and turmeric. Mix well.
  2. Add chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours or overnight.
  3. Preheat grill to medium-high heat.
  4. Skewer the marinated chicken onto the grill skewers.
  5. Grill the chicken for about 15-20 minutes, turning occasionally, until cooked through and slightly charred.
  6. Serve hot with rice and grilled vegetables.
