- 1 ½ cups pistachio nuts, shelled
- 2 cups chocolate cookies, crushed
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- 1 cup melted chocolate
Instructions
- Preheat the oven to 325°F (163°C).
- Crush the chocolate cookies and mix with melted butter to form the crust, then press into the bottom of a springform pan.
- Beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Mix in vanilla extract, sour cream, and melted chocolate until fully incorporated.
- Fold in chopped pistachios and pour the filling over the crust.
- Bake for about 50 minutes, or until the center is set. Let cool before refrigerating.
- Chill for at least 4 hours before serving.
Notes
- For best results, let the cheesecake sit overnight in the fridge.
- Garnish with additional pistachios and chocolate shavings before serving.
