Description

These Pork Belly Banh Mi Lettuce Wraps are a delicious and fresh twist on the classic Vietnamese sandwich, perfect for a low-carb meal.


Ingredients

  • 1 pound pork belly
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons sugar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 head romaine lettuce, leaves separated
  • 1/2 cup pickled carrots
  • 1/2 cup cucumber, sliced
  • 1/4 cup cilantro leaves
  • 1 jalapeño, sliced


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Score the pork belly skin with a knife and season with fish sauce, soy sauce, sugar, garlic, and ginger.
  3. Place the pork belly on a rack in a roasting pan and roast for 2-3 hours until tender.
  4. Remove from the oven and let it cool, then slice into strips.
  5. To assemble, take a lettuce leaf, add pork belly, pickled carrots, cucumber, cilantro, and jalapeño.
  6. Wrap the lettuce around the filling and enjoy!
