Description

A delicious and smoky dish featuring tender pork ribs complemented by chipotle butter, crispy shallots, and a creamy avocado smash.


Ingredients

  • 2 racks pork ribs
  • 1/2 cup chipotle butter
  • 1/2 cup shallots, thinly sliced
  • 2 avocados
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • salt to taste


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the pork ribs with salt and apply chipotle butter generously.
  3. Wrap the ribs in foil and place on a baking sheet.
  4. Bake in the oven for 2.5 to 3 hours until tender.
  5. While the ribs are baking, heat oil in a skillet and fry shallots until crispy.
  6. In a bowl, mash the avocados with lime juice, cilantro, and salt.
  7. Once the ribs are done, remove from the oven, unwrapped, and broil for a few minutes to crisp up the outside.
  8. Serve the ribs topped with crispy shallots and avocado smash.

  • Ensure not to overcook the shallots to prevent bitterness.
