- 2 racks pork ribs
- 1/2 cup chipotle butter
- 1/2 cup shallots, thinly sliced
- 2 avocados
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- salt to taste
Instructions
- Preheat the oven to 300°F (150°C).
- Season the pork ribs with salt and apply chipotle butter generously.
- Wrap the ribs in foil and place on a baking sheet.
- Bake in the oven for 2.5 to 3 hours until tender.
- While the ribs are baking, heat oil in a skillet and fry shallots until crispy.
- In a bowl, mash the avocados with lime juice, cilantro, and salt.
- Once the ribs are done, remove from the oven, unwrapped, and broil for a few minutes to crisp up the outside.
- Serve the ribs topped with crispy shallots and avocado smash.
Notes
- Ensure not to overcook the shallots to prevent bitterness.
- Feel free to adjust the amount of chipotle butter based on your spice preference.
