- ½ teaspoon black pepper
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F.
- In a small bowl, mix together the Dijon mustard, olive oil, tarragon, minced garlic, salt, pepper, honey, and apple cider vinegar until well combined.
- Place the pork tenderloins in a baking dish and coat them evenly with the mustard mixture, ensuring all sides are covered.
- Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F.
- Remove the pork from the oven and let it rest for 5-10 minutes before slicing.
- Slice the pork tenderloins into medallions and garnish with fresh parsley before serving.
