Description

A flavorful pork tenderloin recipe featuring a tangy mustard and tarragon marinade.

Ingredients

Scale
  • 2 pork tenderloins (about 1 pound each)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 tablespoon fresh tarragon, chopped (or 1 teaspoon dried tarragon)
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F.
  2. In a small bowl, mix together the Dijon mustard, olive oil, tarragon, minced garlic, salt, pepper, honey, and apple cider vinegar until well combined.
  3. Place the pork tenderloins in a baking dish and coat them evenly with the mustard mixture, ensuring all sides are covered.
  4. Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F.
  5. Remove the pork from the oven and let it rest for 5-10 minutes before slicing.
  6. Slice the pork tenderloins into medallions and garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the mustard mixture.
  • For a sweeter glaze, substitute maple syrup for honey.
