Description

- 1 pound salted cod
- 1 medium onion, finely chopped
- 2 cups straw potatoes
- 4 large eggs
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
- Soak the salted cod in water for 24 hours, changing the water several times.
- Once soaked, drain the cod and cook it in boiling water for about 10 minutes. Remove and let it cool, then shred the fish.
- In a large skillet, heat the olive oil over medium heat and sauté the onions and garlic until translucent.
- Add the shredded cod and cook for an additional 5 minutes.
- Stir in the straw potatoes and mix well.
- Beat the eggs in a bowl and season with black pepper and salt.
- Pour the eggs into the skillet and gently mix until the eggs are just set.
- Finish with fresh parsley before serving.
Notes
- For a richer flavor, use homemade straw fries.
- Pair with a side salad for a complete meal.
