Description

A traditional Portuguese dish made with shredded salted cod, onions, and straw fries, bound together with scrambled eggs.


Ingredients

  • 1 pound salted cod
  • 1 medium onion, finely chopped
  • 2 cups straw potatoes
  • 4 large eggs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon black pepper
  • Salt to taste


Instructions

  1. Soak the salted cod in water for 24 hours, changing the water several times.
  2. Once soaked, drain the cod and cook it in boiling water for about 10 minutes. Remove and let it cool, then shred the fish.
  3. In a large skillet, heat the olive oil over medium heat and sauté the onions and garlic until translucent.
  4. Add the shredded cod and cook for an additional 5 minutes.
  5. Stir in the straw potatoes and mix well.
  6. Beat the eggs in a bowl and season with black pepper and salt.
  7. Pour the eggs into the skillet and gently mix until the eggs are just set.
  8. Finish with fresh parsley before serving.
