Description

These delightful Portuguese Coconut Macaroons are chewy, sweet, and perfect for satisfying your dessert cravings.


Ingredients

  • 2 cups shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)


Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract.
  3. In a separate bowl, whisk the egg whites with salt until soft peaks form.
  4. Gently fold the egg whites into the coconut mixture until just combined.
  5. Using a spoon or cookie scoop, place the mixture onto a lined baking sheet.
  6. Bake for 20-25 minutes or until golden brown.
  7. If using, melt the chocolate chips and drizzle over the cooled macaroons.

Notes

  • Let the macaroons cool completely before removing them from the baking sheet.
  • Store in an airtight container for up to a week.
  • These macaroons can also be dipped in chocolate for extra flavor!
