Ingredients

- 1 cup canned chickpeas, drained and rinsed
- 1 cup cauliflower rice
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup baby spinach
- 1/2 avocado, sliced
- 1/4 cup cherry tomatoes, halved
- 2 tablespoons feta cheese, crumbled
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
Instructions
- In a skillet, heat olive oil over medium heat. Add the cauliflower rice and sauté for about 5 minutes until tender.
- Stir in garlic powder, smoked paprika, salt, and pepper. Cook for an additional 2 minutes, then remove from heat.
- In a bowl, combine the chickpeas, sautéed cauliflower rice, baby spinach, avocado, cherry tomatoes, and feta cheese.
- Drizzle with lemon juice and sprinkle with fresh parsley. Toss gently to combine all ingredients.
- Serve immediately, or chill in the refrigerator for 15 minutes for a refreshing cold bowl.
Notes
- For added flavor, consider adding a tablespoon of tahini or a dollop of Greek yogurt on top before serving.
- You can also substitute the chickpeas with cooked chicken or tofu for a different protein source.
