- 4 pork chops
- 1 cup pumpkin seeds
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup breadcrumbs
- 2 eggs
Instructions
- Preheat the oven to 375°F (190°C).
- In a food processor, blend the pumpkin seeds with salt and pepper until finely ground.
- Set up a breading station with flour, beaten eggs, and the pumpkin seed mixture.
- Coat each pork chop in flour, dip in the egg, then press into the pumpkin seed mixture.
- Heat olive oil in a skillet over medium-high heat and sear the pork chops for about 3-4 minutes on each side.
- Transfer the seared pork chops to a baking dish and bake for 15-20 minutes, or until cooked through.
