Description

Delicious pork chops coated with a crunchy pumpkin seed crust, perfect for a hearty meal.


Ingredients

  • 4 pork chops
  • 1 cup pumpkin seeds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup breadcrumbs
  • 2 eggs


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, blend the pumpkin seeds with salt and pepper until finely ground.
  3. Set up a breading station with flour, beaten eggs, and the pumpkin seed mixture.
  4. Coat each pork chop in flour, dip in the egg, then press into the pumpkin seed mixture.
  5. Heat olive oil in a skillet over medium-high heat and sear the pork chops for about 3-4 minutes on each side.
  6. Transfer the seared pork chops to a baking dish and bake for 15-20 minutes, or until cooked through.
