- 1 cup cauliflower rice
- 1 cup diced tomatoes (canned or fresh)
- 1 cup shredded lettuce
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1 avocado, sliced
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Drain any excess fat, then add the chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir to combine and cook for another 2-3 minutes until the spices are fragrant.
- While the meat is cooking, prepare the cauliflower rice according to package instructions or sauté in a separate pan for about 5 minutes until tender.
- To assemble the taco bowls, start with a base of cauliflower rice in each bowl.
- Top the cauliflower rice with the seasoned meat, followed by diced tomatoes, shredded lettuce, cheddar cheese, sour cream, and avocado slices.
- Garnish with fresh cilantro if desired. Serve immediately.

- For added flavor, consider mixing in some diced bell peppers or jalapeños while cooking the meat.
