  • 1 teaspoon cumin

  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cauliflower rice
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1 avocado, sliced
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Drain any excess fat, then add the chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir to combine and cook for another 2-3 minutes until the spices are fragrant.
  3. While the meat is cooking, prepare the cauliflower rice according to package instructions or sauté in a separate pan for about 5 minutes until tender.
  4. To assemble the taco bowls, start with a base of cauliflower rice in each bowl.
  5. Top the cauliflower rice with the seasoned meat, followed by diced tomatoes, shredded lettuce, cheddar cheese, sour cream, and avocado slices.
  6. Garnish with fresh cilantro if desired. Serve immediately.
