Description

These Rainbow Crunch Energy Bites are a delightful snack loaded with wholesome ingredients and colorful fun!


Ingredients

Scale
  • 1 cup rolled oats
  • ½ cup almond butter
  • ¼ cup honey or maple syrup
  • ¼ cup mini chocolate chips
  • ¼ cup rainbow sprinkles
  • ¼ cup chopped nuts (optional)


Instructions

  1. In a large mixing bowl, combine rolled oats, almond butter, and honey or maple syrup.
  2. Add in mini chocolate chips, rainbow sprinkles, and chopped nuts if desired. Mix until well combined.
  3. Using your hands, form small balls of the mixture, about 1 inch in diameter.
  4. Place the energy bites on a baking sheet and refrigerate for at least 30 minutes to firm up.
  5. Store in an airtight container in the fridge for up to a week.
