Description

A delicious and elegant ramps and goat cheese soufflé that makes for a perfect starter or light meal.


Ingredients

  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk
  • 1 cup ramps, chopped
  • 4 ounces goat cheese, crumbled
  • 3 large eggs, separated
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
  3. Gradually whisk in the milk and cook until thickened, about 2-3 minutes.
  4. Remove from heat and stir in the ramps and goat cheese until melted.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. In another bowl, whisk the egg yolks with salt, pepper, and nutmeg.
  7. Fold the egg yolk mixture into the ramp mixture, then gently fold in the egg whites until just combined.
  8. Pour the mixture into a greased soufflé dish and bake for 25-30 minutes or until golden and puffed.
  9. Serve immediately.

Notes

  • For an even richer flavor, you can add more goat cheese.
  • Make sure not to overmix the egg whites to keep the soufflé fluffy.
