Description
A delicious and elegant ramps and goat cheese soufflé that makes for a perfect starter or light meal.

- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour
- 1 cup milk
- 1 cup ramps, chopped
- 4 ounces goat cheese, crumbled
- 3 large eggs, separated
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- Preheat the oven to 375°F (190°C).
- In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
- Gradually whisk in the milk and cook until thickened, about 2-3 minutes.
- Remove from heat and stir in the ramps and goat cheese until melted.
- In a separate bowl, beat the egg whites until stiff peaks form.
- In another bowl, whisk the egg yolks with salt, pepper, and nutmeg.
- Fold the egg yolk mixture into the ramp mixture, then gently fold in the egg whites until just combined.
- Pour the mixture into a greased soufflé dish and bake for 25-30 minutes or until golden and puffed.
- Serve immediately.
Notes
- For an even richer flavor, you can add more goat cheese.
- Make sure not to overmix the egg whites to keep the soufflé fluffy.
