- 1/2 cup unsweetened shredded coconut
- 1/4 cup erythritol or preferred sweetener
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh raspberries
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix almond flour, shredded coconut, and erythritol.
- Add melted butter, eggs, and vanilla extract, mixing until well combined.
- Fold in fresh raspberries gently.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes or until golden brown.
- Allow to cool before cutting into squares.
