Description

A hearty and tangy Russian soup packed with flavors of smoked meats, olives, and pickles.


Ingredients

  • 1 lb beef (or a mix of meats like pork and sausage)
  • 1 onion, chopped
  • 3 pickles, diced
  • 1 cup olives, sliced
  • 2 tomatoes, chopped
  • 1 carrot, grated
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1.5 L beef broth
  • 1 lemon, juice and slices for garnish
  • Salt to taste
  • Pepper to taste


Instructions

  1. In a large pot, cook the chopped onions and grated carrots until softened.
  2. Add the diced pickles, olives, and chopped tomatoes, and cook for a few more minutes.
  3. Stir in the tomato paste and paprika, cooking until fragrant.
  4. Add the mixed meats and beef broth, bringing to a boil.
  5. Reduce heat and simmer for about 30-40 minutes until the flavors meld.
  6. Season with salt and pepper, and add lemon juice just before serving.
  7. Serve hot, garnished with lemon slices.
