Ingredients

- 1 lb beef (or a mix of meats like pork and sausage)
- 1 onion, chopped
- 3 pickles, diced
- 1 cup olives, sliced
- 2 tomatoes, chopped
- 1 carrot, grated
- 2 tbsp tomato paste
- 1 tsp paprika
- 1.5 L beef broth
- 1 lemon, juice and slices for garnish
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, cook the chopped onions and grated carrots until softened.
- Add the diced pickles, olives, and chopped tomatoes, and cook for a few more minutes.
- Stir in the tomato paste and paprika, cooking until fragrant.
- Add the mixed meats and beef broth, bringing to a boil.
- Reduce heat and simmer for about 30-40 minutes until the flavors meld.
- Season with salt and pepper, and add lemon juice just before serving.
- Serve hot, garnished with lemon slices.

- This soup is often served with a dollop of sour cream on top.
