Description

Sambal Kangkung is a delicious and keto-friendly stir-fry made with water spinach, garlic, and spices.


Ingredients

Scale
  • 2 tablespoons coconut oil
  • 4 cloves garlic, minced
  • 1 red chili, sliced (adjust for spice preference)
  • 1 pound water spinach (kangkung), cleaned and chopped
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon fish sauce
  • 1 teaspoon lime juice
  • Salt to taste


Instructions

  1. In a large skillet or wok, heat the coconut oil over medium heat.
  2. Add the minced garlic and sliced red chili to the skillet. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  3. Add the chopped water spinach to the skillet. Stir-fry for 3-4 minutes until the leaves are wilted and the stems are tender.
  4. Pour in the soy sauce, fish sauce, and lime juice. Stir well to combine and cook for an additional 1-2 minutes.
  5. Taste and add salt if needed. Remove from heat and serve immediately.

Notes

  • For a spicier version, add more sliced chili or a dash of chili flakes.
  • You can substitute water spinach with other leafy greens like bok choy or spinach if water spinach is unavailable.
