Description
Sambal Kangkung is a delicious and keto-friendly stir-fry made with water spinach, garlic, and spices.
Ingredients

- 2 tablespoons coconut oil
- 4 cloves garlic, minced
- 1 red chili, sliced (adjust for spice preference)
- 1 pound water spinach (kangkung), cleaned and chopped
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon fish sauce
- 1 teaspoon lime juice
- Salt to taste
Instructions
- In a large skillet or wok, heat the coconut oil over medium heat.
- Add the minced garlic and sliced red chili to the skillet. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add the chopped water spinach to the skillet. Stir-fry for 3-4 minutes until the leaves are wilted and the stems are tender.
- Pour in the soy sauce, fish sauce, and lime juice. Stir well to combine and cook for an additional 1-2 minutes.
- Taste and add salt if needed. Remove from heat and serve immediately.
Notes
- For a spicier version, add more sliced chili or a dash of chili flakes.
- You can substitute water spinach with other leafy greens like bok choy or spinach if water spinach is unavailable.
