Sauerbraten Meatballs with Red Cabbage is a delicious dish that combines flavorful meatballs with a tangy side of red cabbage.
Ingredients
Scale
- 1 ½ pounds ground beef
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon ground ginger
- 1 teaspoon ground allspice
- ½ cup beef broth
- 1 tablespoon apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons vegetable oil
- 1 medium head red cabbage, thinly sliced
- 1 large apple, peeled and diced
- 1 onion, sliced
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup water
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, salt, pepper, ginger, and allspice. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- In a large skillet, heat the vegetable oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove from the skillet and set aside.
- In the same skillet, add the beef broth, apple cider vinegar, and Worcestershire sauce. Bring to a simmer, then return the meatballs to the skillet. Cover and simmer for 20 minutes, until cooked through.
- While the meatballs are simmering, prepare the red cabbage. In a large pot, combine the sliced cabbage, diced apple, sliced onion, apple cider vinegar, sugar, salt, pepper, and water. Stir well.
- Cover the pot and cook over medium heat for about 30 minutes, stirring occasionally, until the cabbage is tender.
- Serve the meatballs hot with the red cabbage on the side.
Notes
- For a tangier flavor, add a tablespoon of mustard to the meatball mixture.
- Substitute ground turkey or chicken for a lighter version of the meatballs.
